Interstellar Stella is a single-origin Burundi filter coffee produced by 1,739 smallholder farmers working with Kibingo washing station.

This experimental speciality coffee is made from Red Bourbon and processed using an Intenso yeast-inoculated, fully washed method.

Expect a strange transmission of Cocoa, Kombucha and Raspberry — deep chocolate sweetness, sparkling fermentation and a bright beam of red-fruit flavour.

🛸 Burundi Coffee from Kibingo Washing Station

Stella’s latest cargo comes from Kibingo washing station in Kayanza, northern Burundi.

Kibingo works with 1,739 registered smallholder coffee farmers spread across 18 surrounding hills. Most families cultivate only a few hundred coffee trees, often growing coffee alongside food crops around their homes.

During harvest, ripe Red Bourbon cherries arrive from farms located approximately 1,700 to 1,900 metres above sea level. These high-altitude growing conditions contribute to the sweetness, acidity and complexity for which Burundi speciality coffee is known.

The producers are organised into groups of 30, each represented by a farm leader who helps coordinate communication between farmers and the washing station.

Kibingo also supports its coffee-growing community through compost made from coffee pulp, subsidised seedlings and projects designed to improve coffee quality, farm productivity and local livelihoods.

🧬 Intenso Yeast-Inoculated, Fully Washed Process

This is where Stella starts pressing buttons she probably shouldn’t.

Only ripe coffee cherries are selected before being floated and carefully sorted at Kibingo washing station.

After the cherries are pulped, the coffee is fermented using a specially selected Intenso yeast culture. This creates a controlled fermentation environment that can increase fruit intensity, brightness and complexity in the finished coffee.

The coffee is then fully washed to remove the remaining fruit material before being carefully dried.

Think of the yeast as a microscopic flavour-navigation system, steering this Burundi coffee beyond a conventional washed profile and further into raspberry, kombucha and cocoa territory.

The flavours are created during coffee fermentation at origin. Nothing is artificially added to the roasted beans.

No artificial flavouring.
No ingredients added after roasting.
Just Red Bourbon coffee, controlled fermentation and some very small intergalactic organisms doing unusual things.

The result is clean but curious: juicy raspberry acidity, kombucha-like sparkle and a smooth cocoa finish bringing everything safely back to Earth.

Give the coffee a generous bloom and pour slowly.

Drink it hot for deeper cocoa sweetness, then allow it to cool. As the temperature drops, the raspberry and kombucha notes become brighter and more expressive.
