Where Silly Simon Comes From
Silly Simon comes from Alto del Obispo, a misty mountain district near the historic town of San Agustín in Colombia’s celebrated Huila region.
Volcanic soils, cool nights and warm days allow the coffee cherries to ripen slowly, building the sweetness and depth that make Huila coffees so well suited to espresso.
Most farms in the area are small, family-run plots. Around 80% of producers cultivate fewer than three hectares, tending their coffee trees and harvesting the ripe cherries largely by hand.
After harvesting, the cherries are brought to local washing stations, where careful fermentation, washing and drying help lock in the coffee’s sweetness and clarity. The result is a clean, balanced cup with plenty of chocolatey comfort and a bright little twist in the finish.
Cóndor has worked with coffee producers in the area for more than three decades, helping San Agustín become one of the most recognised names in Colombian specialty coffee.
In 2005, the community also partnered with Cóndor and Colombia’s Instituto Colombiano de Bienestar Familiar to establish the Centro Comunitario Alto del Obispo. The centre provides childcare and nutritional support for farming families, particularly during the busy coffee harvest.
