🌿 From Capilla del Rosario
In the mountains of Medellín, Antioquia, José Posada and his family run Capilla del Rosario — a fourth-generation coffee farm with a restless curiosity about what comes next.
Generations of growing experience meet fermentation tanks, a sensory lab, and a willingness to experiment.
The farm has become a place for learning, tasting, and pushing coffee into new territory.
Sangria Rose is a little glimpse of that world.

⚗️ Process: Modulated Sangria Rose
This is where the floral trip begins.
After depulping and washing, the coffee spends several days submerged in a carefully prepared fermentation liquid, under controlled, semi-anaerobic conditions.
Selected microbial cultures, including Lactobacillus, work alongside sugars and natural red fruit extracts to shape sweetness, texture, and complexity.
Fruit is part of the fermentation itself.

Depulping & Washing – Preparing the coffee for fermentation

Modulated Fermentation – Selected cultures, fruit extracts, and sugars in a controlled liquid environment
