Justine Beaver – Colombia Filter Coffee

Justine Beaver is back.

Again.

Every year she disappears into the forest for a while.

Nobody knows where she goes.

Nobody knows what she's building.

Then one day she wanders back out carrying a fresh harvest of something strange and delicious.

This year's adventure takes us to Buena Vista Farm in Huila, Colombia, where producer Edwin Zambrano has somehow managed to turn fruit, sunshine and fermentation into one of the juiciest coffees we've tasted all year.

Edwin Zambrano grew up surrounded by coffee trees in the mountains of Huila.

What started as family tradition has evolved into a farm focused on producing expressive, fruit-forward specialty coffees through careful cultivation, fermentation and drying.

Buena Vista sits high in the Colombian mountains where cool temperatures slow down cherry development, creating coffees packed with sweetness, complexity and vibrant fruit character.

Alongside coffee, Edwin grows bananas, plantains, cassava, corn and fruit trees, helping create a diverse ecosystem that keeps the farm healthy for future generations.

The result is coffee that tastes alive.


Natural Anaerobic Process

This coffee gets a little strange before it gets good.

Only the ripest cherries are harvested before being sealed inside fermentation tanks where oxygen is removed and nature starts doing weird science.

Inside the tanks, sugars break down slowly.

Flavours become louder.

Fruit becomes fruitier.

Reality becomes slightly negotiable.

The cherries are then dried slowly on raised beds and covered patios for up to 20 days, concentrating sweetness and building layer after layer of complexity.

The result is a cup that somehow feels both wild and incredibly clean at the same time.

The first sip feels like biting into a watermelon that somehow grew in another dimension.

Milk Teeth Candy

Sweet, nostalgic and impossible to fully explain.

The sort of sweetness that makes your brain search for a memory it can't quite find.

Cherry

Clean fruit acidity that keeps everything balanced and finishes beautifully.

Underneath it all you'll discover flashes of mango, passion fruit, ripe orange and winey fruit notes that reveal themselves as the cup cools.

Every brew seems to show you something slightly different.

Nobody really understands Justine.

At first she seems harmless enough.

Just a beaver.

Doing beaver things.

Then you notice she's built a dam across a river that wasn't there yesterday.

Then you realise the river wasn't there either.

By day three she's teaching hummingbirds about fermentation.

By day five she's convinced a mango tree to grow oranges.

Nobody argues anymore.

The hummingbirds seem happy.

The oranges taste incredible.

And somehow everything keeps working.

So we leave her to it.
